Paprika and Philly Scrambled Egg on Toast

Ingredients:

  • 2 Eggs
  • Bread
  • Salt
  • Paprika
  • Margarine/Butter
  • Philadelphia

Method:

  1. Get a microwaveable jug and break in the 2 eggs
  2. Whisk well
  3. Season with the salt and paprika: a good shake of both
  4. Add a dollop of butter and Philly
  5. Microwave for 3min, stopping every minute to break up the egg with a fork
  6. You may find it needs a little longer
  7. Toast your bread
  8. Put the egg on the toast and enjoy
  9. Add your favourite sauce/condiment!

Fancy Cheese on Toast (Why not try using a sliced, over roasted aubergine instead of bread for a healthier option!)

Ingredients:

  • Bread
  • Philadelphia cheese
  • Cheddar cheese

Method:

  1. Toast your bread
  2. Spread on the philly
  3. Slice some cheese and place on top
  4. Grill for 1-2min until melted
  5. Voila! The tastiest cheese on toast you will ever eat
  6. Add a sauce of your choice or perhaps some sliced tomatoes.

Pancakes

Ingredients

  • Asda’s white and milk choc swirl spread
  • Cheap pancake mix normally around 15p
  • 1 egg (some may require milk too)

Method:

  1. Follow the instructions on the packet
  2. Add the mouth-watering spread
  3. Maybe pop some strawberries on top - Mmmmmmm one very cheap pancake day!

Soup

Got a blender? Roast loads of veg and potatoes and blend them, add some crème fresh and season to taste. Heat up and then enjoy. (I recommend butternut squash and bacon soup)

Cheese and bacon pasta bake (Veggie option: Try adding some broccoli instead of bacon)

Ingredients:

  • 2 rashers bacon
  • 225g penne pasta
  • 1 onion (chopped)
  • 1 clove of garlic (chopped)
  • 340g Cheddar cheese
  • 30g butter
  • 3 tablespoons plain flour
  • 475ml milk

Method:

  1. Preheat oven to 180 C / Gas 4.
  2. Cook the bacon then  cut it into pieces
  3. In a large pot with boiling salted water, cook the pasta and drain.
  4. In a frying pan, throw in the chopped onion and garlic until sautéed. Then take it off the heat and add the bacon and set it aside.
  5. To make the sauce, melt the butter over low heat. Add the flour and stir for 2 minutes. Gradually add milk and continue stirring until thick. Stir in 2/3 of the grated Cheddar cheese until melted.
  6. Combine cooked pasta, veg and sauce. Pour into a baking dish. Sprinkle remaining cheese.
  7. Bake until cheese on top is melted and brown (15/20 mins)

Hunter’s Chicken (Veggie option: Quorn Chicken and Quorn Bacon/Ham)

Ingredients:

  • Chicken breast
  • Bacon (1 slice for each chicken breast you cook)
  • Cheese
  • BBQ sauce
  • Curly fries
  • Veg of choice (I recommend peas and sweetcorn)

Method:

  1. Cook the chicken at 200C/gas mark 7
  2. Whilst it’s cooking prepare your veg and cook your bacon. After 10mins of the chicken cooking, put some curly fries in the oven too
  3. Take the chicken out after 30mins total cooking time (Check it’s cooked thoroughly)
  4. Spread some bbq sauce on top, wrap the bacon around it and then lay some cheese on top or grate it on
  5. Pop back in the oven for 5mins
  6. Take out all of your food, plate up and eat!

Smoky Bacon Pot Noodle (Veggie option: Add some Quorn chicken or sausages)

Ingredients:

  • 1 rasher of smoked back bacon, trimmed and chopped
  • 2 spring onions, bulb and stalk separated and finely sliced
  • 50g frozen peas
  • Quarter tsp paprika
  • 2 tsp cornflour
  • 200ml vegetable stock
  • 150g block straight-to-wok wheat noodles, or equivalent of dried, cooked noodles
  • Worcestershire sauce

Method:

  1. In a pan, fry the bacon for a few mins.
  2. Add the white parts of the spring onions, peas and paprika, then cook for 1 min.
  3. Mix the cornflour with a little of the stock to get a paste.
  4. Stir this into the pan with the rest of the stock, noodles and a good splash of Worcestershire sauce.
  5. Simmer for a couple of mins until thick.
  6. Sprinkle on the green parts of spring onion.
  7. That’s dinner sorted!

 

Top Tip 1: Always look in the reduced sections of supermarkets at around 6-7pm to grab yourself a bargain. The food is fine as it is the current day’s date and then you can just freeze it when you get home to make it last longer.
